Simple to make, yet deliciously rich in flavor. Here is OnlyEg's take on the world-famous patty sandwich.

Sourdough bread
Plant-based bologna
Caramelized onions
Sauteed mushrooms (king oyster, shimeji, and shiitake)
Cheddar cheese
Mozzarella cheese

1 tbsp mirin
1 tbsp soy sauce
A pinch of salt
1 clove garlic

Steps
Using a bread knife, slice the sourdough bread. You can make the slices as thin or as thick as you want. A good guideline is ½ to 1 inch (1.27 to 2.54 centimeters) thick.
Clean mushrooms and slice them into ½ inch thick. Add butter and oil over medium-high heat. Add the mushrooms to the pan. Do not stir allow to cook for 4-5 minutes. Add a bit of garlic, shallots, mirin, soy sauce, and garlic.
Heat the pan on medium-high heat until the oil is shimmering. Add the onion slices and stir to coat the onions with the oil. Spread the onions out evenly over the pan and let cook, stirring occasionally. After 10 minutes, sprinkle some salt over the onions, and if you want, you can add some sugar to help with the caramelization process.
Flash heat the bologna.
To assemble, start with 1 bread slice, add the caramelized onion, add the bologna and the OnlyEg Patty, cheese, and put the other slice of bread on top.
Put the sandwich in the oven at 180 degrees to let the cheese melt and the sourdough become crispy.
